  • 2 oz dark or aged rum 60 ml
  • 2 oz grilled pineapple juice 60 ml, see below
  • 1 oz orange juice 30 ml
  • ½ oz fresh lime juice 15 ml
  • ½ oz simple syrup or honey 15 ml, optional for extra sweetness
  • 2–3 oz Ginger beer or club soda 60–90 ml, to top
  • Ice for shaking and serving
  • Garnish: grilled pineapple wedge lime wheel, fresh mint sprig
For a Pitcher (6–8 Servings)
  • 12–14 oz Dark or aged rum 360–420 ml
  • 12–14 oz Grilled pineapple juice 360–420 ml
  • 6 oz Orange juice 180 ml
  • 3–4 oz Lime juice 90–120 ml
  • 3–4 oz Simple syrup or honey 90–120 ml, optional
  • 12–16 oz Ginger beer or club soda 360–480 ml, to top
  • Ice enough to fill pitcher halfway
  • Garnish: grilled pineapple wedges lime wheels, fresh mint sprigs
For Grilled Pineapple Juice (Makes ~8–10 oz)
  • 4–6 Fresh pineapple rings
  • Light sprinkle of brown sugar (optional, for deeper caramelization)

Method
 

Grill the Pineapple
  1. Preheat grill to medium-high.
  2. Lightly sprinkle pineapple rings with brown sugar if desired.
  3. Grill 2–3 minutes per side until caramelized with grill marks.
  4. Let cool slightly.
  5. For juice: blend grilled pineapple with a splash of water, then strain.
  6. For rustic style: muddle grilled pineapple directly in the shaker.
Build the Cocktail
  1. In a shaker filled with ice, combine:

  4. 1 oz orange juice
  5. ½ oz lime juice
  6. Optional: ½ oz simple syrup or honey
  7. Shake well until chilled.
  8. Strain into a rocks or tiki glass filled with fresh ice.
  9. Top with 2–3 oz ginger beer for spice, or club soda for a lighter version.
  10. Garnish with grilled pineapple, lime wheel, and mint sprig.
Build the Pitcher (6–8 Servings)
  1. In a large pitcher, combine:
  2. 12–14 oz rum
  3. 12–14 oz grilled pineapple juice
  4. 6 oz orange juice
  5. 3–4 oz lime juice
  6. Optional: 3–4 oz simple syrup or honey
  7. Stir until combined.
  8. Add ice to fill pitcher halfway.
  9. Top with 12–16 oz ginger beer or club soda. Stir gently.
  10. Garnish with grilled pineapple wedges, lime wheels, and mint sprigs.
