Grandma’s Peach Cobbler

Every BBQ has a dish that becomes part of the tradition. For me, it is this Peach Cobbler. A friend of mine brings it to nearly every BBQ I host, and it is a recipe that has lived in her family for three generations. Her grandmother made it for neighborhood cookouts, her mother carried it on for years, and now she has the honor of keeping it alive.
The beauty of this cobbler is its simplicity. A buttery golden crust bakes around syrupy sweet peaches in a cast iron skillet. There is no need to roll dough or fuss with complicated steps. You simply melt, mix, pour, and bake. The result is warm, gooey, and unforgettable. Serve it with a scoop of vanilla ice cream and you will see why it always disappears first.
A Little History
Peach cobbler is a classic Southern dessert that shows up at countless BBQs and church gatherings across Texas. Cast iron skillets and cobblers are a perfect match, and this recipe stays true to its roots. No shortcuts, no unnecessary changes, just the same family-tested method that has been loved for decades.

Description of the Finished Dish

The top is golden and crisp, the inside is buttery and soft, and the peaches melt into the crust with every bite. This cobbler is rustic, simple, and exactly what you want after a plate of Texas BBQ.

What to Look For

  • The top should be a deep golden brown, not pale.
  • The edges should bubble with syrup as the crust rises around the peaches.
  • The crust should look set and slightly crisp, not wet or doughy.
  • When you cut in, you should see layers of buttery crust and tender peaches.

Pro Tips

  • Warm the peaches briefly on your smoker before adding them for a subtle wood-kissed flavor. Pecan wood works especially well.
  • Bake the cobbler earlier in the day, then reheat in the oven at 300°F (149°C) for 10–15 minutes before serving.
  • Use fresh peaches when in season. Slice 4–5, sprinkle with a little sugar, and swap them in for canned.
  • Store leftovers in the fridge for up to 3 days. Reheat in the oven to bring back the crisp crust.

Variations

  • Berry Cobbler: Swap peaches for blackberries or blueberries, using the same syrup-style base.
  • Mixed Fruit: Combine peaches with raspberries for a sweet-tart balance.
  • Spiced Cobbler: Add a teaspoon of vanilla extract or a pinch of ginger for more depth.
  • Crispy Top: Sprinkle a tablespoon of sugar on top of the batter before baking for extra crunch.
