I don't know what happened if they have a new pit master or what. Our brisket was really moist, but like over tenderized. The bark was soft/mushy. The flavor wasn't there either. The Gouda cheese sausage was really good.

I've loved San Marcos BBQ for the last 5 years, but no more... not sure what has changed in the last 6 months, but it has changed for the worse... no longer do they cut your meat at the counter for you, they give you a number and they'll bring it to you when it's convenient for them. It was not busy at all, 2 people ahead of me, and it took over 10minutes for this sorry looking meat to be brought to my table. No bark at all. I don't know what this "other" brisket was that they chose to serve me, but it was the driest, tasteless meat I've ever gotten at any BBQ joint. It went in the trash and we went to Blacks. Sorry to say, San Marcos BBQ has failed....

The brisket had the juiciness and char with the hint of sour you want. Perfection. Sausage was with Gouda was the right amount spice. The potatoes with sausage and cheese were a favorite, Kudos to staff, they didn't upsell. Actually helped us get more food with the specials for less price. Great job pit master and great Jo's staff.

I dropped in just a few minutes before closing and the staff still gave me a warm welcome. The gal taking my order was friendly and very helpful in helping me decide on what to order. I got ribs with pinto beans and Mac&cheese with an ice tea. They added pickles and onions, BBQ sauce, and 3 slices of bread. The ribs were amazing and yes the meat just fell off the bone. The sides and everything else was very good. Inside it was a simple dining area that was clean and well lit. Very much enjoyed all aspects of this place and the friendly staff. 👍

Brisket, sausages, green beans and the potato salad are delicious. It is very well priced. Ever since I found this place, I stopped going to other more expensive options. This place delivers an incredible Texan BBQ experience. I am giving it 4/5 stars in atmosphere because they need a bit of improvement in the facility. Other than that this place is one of my favorites in the San Antonio-Austin area.
